Rice & Diabetes

Did you know that the rise in diabetes in India may be linked to how we cook rice? Traditionally, excess starch was removed while cooking, but pressure cookers retain it—leading to higher sugar intake.

Could this simple change in cooking methods be affecting our health?

Your thoughts?

Support info:

  1. Starch Removal in Traditional Cooking – Earlier, rice was typically cooked by boiling and draining excess starch, reducing its glycemic impact. Pressure cooking retains all the starch, leading to higher sugar intake.

  2. Higher Glycemic Load – Retained starch increases the glycemic index of rice, causing quicker spikes in blood sugar, which can contribute to diabetes over time.

  3. Dietary and Lifestyle Changes – The adoption of pressure cookers coincided with modernization, reduced physical activity, and increased consumption of refined foods, all of which contribute to rising diabetes cases.

No need to experiment, I have been through the pressure cooker life style change in last 40 years, I have observed that impact in terms of number of diabetic patients in my relatives

this is not completely undeniable. But, there is another factor that is not taken into account. Native rice is no longer grown. My grand father, says, in the 60's, the government provided "modified rice" that was part of the green revolution. and after that, by the 8-'s almost no one in the region was growing the native rice that was once grown.

Dehusking was done manually till 80s. machined rice became the norm after that. The rice we eat is "polished". So we are taking more starch than before. Not to mention, The amount of physical activity is almost nil for most of us. We spend all of our day sitting - either in bike/car, office chair, cafeteria, or at home in front of TV. Since the beginning of time, no human would have spent this much time sitting like we do in the last 40 years.

Basically removing starch from rice is an important step during cooking rice. This starch is used as cattle feed or to increase stiffness of cotton cloths. Now we are consuming it the step itself is not followed.

I don't think green revolution covered aspect related to starch removal.

There is no source for diabetes, the body activities are the main things, eat your favorite dish but mind the limit okay. Walking at least one hour like 10k steps. Eat only when you are hungry. Google it what is insulin how it affects our body if we are not doing proper exercise.

How our grandparents live healthy, they live their life in mindfulness. Don't Overthink, don't compare others, live your life.

For every major problem, there is a simple solution there.

Enjoy your life with daily exercise.
